1/2 c peanut butter
2 c. unsweetened shredded coconut
1/4 c. chopped cashews
1 tbsp. orange juice
1/2 c. chopped dates
1/2 c. raw sunflower seeds
1/4 c. honey
1/2 c. raisens
Mix all together and form into balls. Enjoy!! Good for snack for kids.
***Can exchange ingred. raisens for mini choc chips, etc.

Best Brownies
1/2 c. butter, melted
1 cup. sugar
1 tsp vanilla
2 eggs
1/2 c. flour
1/3 c cocoa
1/4 tsp baking powder
1/4 tsp salt
1/2 c. chopped nuts.
Heat oven to 350. Greast 9 " square pan. Stir together butter, sugar and vanilla. Add eggs. Combine flour, cocoa, baking powder and salt, gradually add to butter mixture, beating until well blended. Stir in nuts. Spread into pan. Bake 20-25 min, until brownies pull away from side of pan. Cool, frost with Creamy Brownie Frosting

3 tbsp butter, softened
3 tbsp cocoa
1 tbsp corn syrup or honey
1/2 tsp vanilla
1 c. powdered sugar
1 to 2 tbsp milk
Beat butter, cocoa, honey, and vanilla. Add powdered sugar and milk, beat to spreading consistency.
ENJOY. Make a double batch for 13 x9 pan.....you will eat them!! :)

Cappuccino Doughnut Bars
For the dough layer:
1 1/4 c. flour
3/4 c. sugar
1/4 c. cocoa powder
2 tbsp. instant espresso powder
1 tsp baking powder
1 tsp cinnamon
1/2 tsp baking soda
1/2 tsp salt
1/2 tsp nutmeg
1/2 c. buttermilk
4 tbsp butter, melted
For cheesecake layer:
2 pkg cream cheese
1/2 c sugar
2 eggs
1/4 c. coffee flavored liqueur
1 c. chopped chocolate covered coffee beans
Preheat oven to 350. Grease 9x 13 pan. Whisk together flour, sugar, cocoa, espresso powder, baking powder, cinnamon, baking soda, salt, and nutmeg. Stir in buttermilk and butter until combined. Spread evenly into pan.
Beat cream cheese and sugar until combined. Add eggs and liqueur, beating until smooth. Pour over doughnut layer.
Bake cheesecake until set, about 25 min. Let cool slightly. Sprinkle with chocolate covered coffee beans. Refrigerate until cool, cut into squares, and serve.
*****I used Kahlua coffee liqueur flavored syrup. This is awesome with a cup of coffee!!!!

Sugar Cookies
2/3 c shortening (i used butter)
3/4 c sugar
1/2 tsp orange peel
1/2 tsp vanilla
Cream together above ingredients
Add 1 egg till light and fluffy
Stir in 4 tsp milk
Add 2 c. flour
1 1/2 tsp baking powder
1/4 tsp salt
Chill for 1 hr. Then roll out 1/8 inch thick
Bake 375, 6-8 min.
You will need a triple batch. These are excellent
Frosting: powdered sugar
vanilla(lemon)
milk
butter
may add orange or lemon peel

Easy Scottish Shortbread

1/4 teaspoon salt
1/4 teaspoon baking powder
Cream butter and sugar. Mix flour, salt and baking powder and add to creamed mixture. Roll out on cookie sheet or pizza pan (ungreased) to 1/4 inch thick. Prick lightly with fork.
Bake 350 degrees 20-25 minutes until lightly browned. Cut into squares immediately upon removing from oven.

4 oz bittersweet chocolate, broken in pieces
3/4 c. flour
1/4 c. cocoa
1/2 tsp baking powder
1/4 tsp salt
1 cup sugar
2 eggs
1 tsp vanilla
3 oz. bittersweet chocolate, roughly chopped.
Prepare grill or preheat oven to 350. Grease wells of preseasoned cast iron biscuit pan.
In saucepan, melt butter and chocoalte pieces, stirring constantly. let cool.
In a bowl, whisk together sugar, eggs, and vanilla. Add chocolate mixture, then flour mixture until combined. Stir in chopped chocolate.
Divide among prepared wells, spreading evenly. Bake until tops are shiny and toothpick comes out with few crumbs, 20-30 min.

Best Big, Fat, Chewy Chocolate Chip Cookies
That name says it all. These always get compliments and are gone in a hurry!!
2 cups flour
1/2 tsp baking soda
1/2 tsp salt
3/4 c butter, melted
1 cup brown sugar
1/2 cup white sugar
1 tbsp vanilla
1 egg
1 egg yolk
2 cups chocolate chips
1. Preheat oven to 325. Grease cookie sheets.
2. Cream together melted butter, brown sugar, sugar until blended. Beat in vanilla, egg and yolk. Mix in dry ingredients until blended. Stir in chocolate chips. Drop dough by 1/4 cup onto prepared sheets. Cookies should be three inches apart
3. Bake for 15 min or until edges are golden. Remove and cool slightly if you can wait that long.
******We have experimented with a variety dessert using this recipe.
Cream Cheese Filling
2 - 8 oz cream cheese
1/2 cup sugar
2 eggs
You can make the above cookie recipe and 3/4 in a 9x13 pan. Then put the cream cheese filling over it, then sprinkle the remaining cookie dough over and bake 350 for 35 min.
This will also make an 8x8 and a pan of 6 muffin cups. All excellent.
I have used half recipe of cream cheese filling with the 8x8 and muffin cups and turns out great too. Also i have used maple syrup instead of sugar for the cookies. Turns out fine, but not as great as sticking with the recipe.

Peanut Butter Cake
Boil 2 sticks butter, 1 c. water and 1/2 c. peanut butter.
Add 2 c. flour
2 c. sugar
2 eggs
1/2 c. sour cream
1/2 tsp salt
1 1/2 tsp soda
Beat until mixed and put in jelly roll pan.
Bake 350 for 20 min.
Boil 1 stick butter, 1/3 c. milk, 1/2 c peanut butter, and 1 tsp. vanilla
Add 1 lb. powdered sugar
Spread on top of cooled cake.
***A tried and true recipe with rave reviews!

Beat butter and sugar until fluffy. Add eggs, one at a time. Beat in vanilla. Combine flour, cocoa, baking powder and salt. Gradually add to butter mixture. Divide dough in half. Wrap each half in plastic wrap and chill for 1 hour.
Preheat oven to 350. Roll out dough to 1/4 inch thickness. Cut out thickness. Bake for 8-10 min or until edges are firm. Let cool on pan for 2 min. Remove from pan and cool. Frost and sprinkle.
** I used cream cheese frosting and they were delicious!!!!
